Ingredients

- 2 tablespoons finely chopped fresh thyme
- 1 tablespoon finely chopped fresh rosemary
- 1/4 cup Merlot or other spicy red wine
- 2 tablespoons cornstarch
- 1 TB water
- Black Pepper
- 1/2 tsp Salt
- 2 cup low-sodium vegetable broth, divided
- 5 cloves garlic, minced
- 1 oz dried porcini, Cold Water soak for 8 hours, overnight, reserve water

Make sure to cheese cloth and chinoise the mushroom water before you use it as it can get gritty, also check mushrooms after soak for grit.

Reduce mushroom liquid to 1/4 cup on stove. Add stock. Bring to simmer. Add herbs, mushrooms, salt, pepper, and garlic. Simmer to combine flavors, about 10 minutes. Mix cornstarch and water into slurry. Combine slurry with pot. Reduce to desired consistency.
