Tomas’ BBQ Sauce

Description

So I like BBQ sauce that while a touch sweet has a bit of tang and spice to it. So this is the version I serve at my table. It also because of the sugar content caramelizes well under a broiler.

Ingredients

8 TBS Light Brown Sugar (106 Grams)
3 TBS Salt (34 grams salt in diamond)
1 TBS Dijon
1 TBS Chili Paste
1/2 TSP "Old Bay"
1 TB Fresh Thyme
1/2 tsp Onion Powder
1/2 tsp garlic powder
1 C. White Wine (Crisp High Acid)
3 TBS Apple Cider Vineagar
2 TBS Worcestershire
3 TBS Honey
1/4 Cup Ketchup
4 oz Tomato Paste
2 TB Butter

Directions

Put all the ingredients in a non-reactive sauce pan

Simmer lightly for 30 minutes

Blend on high speed once cooked to even flavors and texture
