Simple Sous Vide Chicken Breast with Herb Marinade

Description

I often find chicken breasts fairly bland. Even most of the people who work out or just want to eat healthy they can be dry. So for a friend that was working out more and needed a quick recipe that could be frozen until used I prepared this.

So here we will look at a basic and juicy chicken breast with the aide of your sous vide machine.

Ingredients

The Marinade:
1 Onion, sliced
3 Tablespoons of chopped flat parsley
1 Tablespoon of chopped fresh thyme
2 Bay leaves torn up
2 Garlic cloves sliced thinly
5 Tablespoons olive oil
2 Teaspoons fresh lemon juice
Salt and pepper
The Chicken:
2 Large chicken breasts
1 Tablespoon vegetable oil

Directions

Chop your herbs and pre-heat the sous vide to 60C

Season the chicken breasts liberally with salt and pepper.

Then in a dish of the right size cover them with the mixture of herbs and onions.

In a seperate bowl mix the olive oil and lemon juice mixing fully with a fork.

Pour this over the chicken breasts with herbs.

Let marinate in the fridge for 45 minutes. Do not over marinate as they will become mealy.

After the waiting seal them in your sous vide bags and throw in the bath that is pre warmed to 60 C. Put in the bath for 1.5 hours minimum and 4 hour maximum.

When complete heat a large heavy skillet with the oil to searing heat.

Sear on each side for 90 seconds to give color.

Serve immediately. Sous vide meat doesn’t need to rest.
