Simple Seared Steak

Description

There is nothing like a perfectly seared steak. I often cook this to cheer myself up with a great bottle of wine.

Ingredients

One or more steaks 1.5 - 2 inches thick
Pepper and Salt
I highly suggest a good, deep, red wine
Cast Iron Skillet (a lot of pans will not handle the ultra high temp needed, so go cast iron)

Directions

Pre-heat your oven to 450 - 500 degrees with the skillet in it.

Take the steaks out of the fridge and salt / pepper them liberally.

Go watch a TV show or something while it heats.

Once heated use a very thick glove and move it to top burner on the stove on high. Wait a couple minutes for more heat to be applied.

Sear the steak on each side for 30 seconds on the burner.

Move pan to the oven.

Two minutes on each side in the oven.

Let rest for five minutes before serving (I know, this is super hard)
