Frittata Recipe – All Purpose Ratio

Description

The attached recipe is for when I have a few people over in the morning. Instead of saying that you need a recipe here is my magic ratio and timings.

Ingredients

12 eggs
1/2 cup dairy
1 cup cheese
Cook add ins before adding
Taste, salt, and check before cooking

Directions

Pre-heat oven to 350 degrees

Put a 10 inch cast iron in while it pre-heats

Mix all ingredients in a bowl. I do this while I'm making the mixings so it's at full temp by the time I need it.

Salt and check seasoning (don't do this is your susceptible to undercooked eggs, but it's hard to season without it)

Take the pan out of oven (don't leave the oven door open while you do this), and using an oil spray, put a healthy coating of canola on the pan

Pout the mixture in and you'll hear it sizzle

Bake until done, 20-30 for 12 eggs, 30-40 minute for 24

I usually flip it over onto a board so you get the amazing brown look from the bottom of the pan.
