Description

Ingredients

- 2 cups fresh Italian parsley leaves (packed)
- 4 garlic cloves, peeled and smashed
- 1/4 cup fresh oregano leaves (packed)(or 4 teaspoons dried oregano)
- 1/4 cup red wine vinegar
- 1/2 teaspoon red pepper flakes
- 1/2 teaspoon kosher salt (or more to taste)
- Freshly ground black pepper
- 1 cup extra-virgin olive oil

Directions

Combine all ingredients besides the oil in a food processor and pulse three times for short bursts.

Drizzle the oil in while pulsing the food processor. Do not overdo it. You want a chopped up texture not a puree.

Let sit for a while so the vinegar softens the taste of the garlic.
