Buttermilk Waffles

Description

You’ll notice it is similar to our buttermilk biscuits recipe. Contrary to popular belief you do not let this batter rest as it uses baking powder and soda which start acting once you add liquid.

This recipe is based off of a build from the King Arthur Flour Company.

Ingredients

2 cups pastry flour (213 grams)
2 tsp baking powder
1 tsp baking soda
1 tsp salt
2 tb sugar
1/2 cup almond flour
2 eggs (beaten)
1 3/4 cup buttermilk
2 tsp vanilla

Directions

Preheat your waffle iron (the flip type are best)

Combine all dry ingredients in one bowl

Combine wet ingredients in the other

Once waffle iron is heated combine wet and dry ingredients to mix, some lumps are ok

Add 1/3 cup of waffle mix on the iron if 8'' round, or be sensible

I use a lower temp on the iron and then wait until the waffle iron is done steaming. If the waffle iron beeps or says it is done and it is still steaming.... the waffle iron is lying. For even crisper waffles cook longer.

Pull off on a cooling rack, if you put these on a flat surface the bottom of the waffles will be less crispy than you would like as they steam out.
