Description

This recipe was a hand me down that appears to come from Sean Brock’s kitchen. I’m presenting it as it was taught to me and it is amazing.

Ingredients

3 Cups AP Flour (360 grams)
4 oz Unsalted Butter (115 grams), Cold
1 tsp Salt
2 tsp Baking Powder
1 tsp Baking Soda
1 1/4 Cup Cold Buttermilk

Directions

Pre-heat oven to 425, put a 10 inch cast iron skillet into the oven with it

Cut butter into small cubes and keep them in fridge so they stay cold

Mix dry ingredients: flour, slat, baking powder, baking soda together and whisk to combine

Working fast. Combine flour and butter with your hands, working the butter into the dough until it has broken down into pea size pieces

Combine buttermilk into mixture and combine until it is just wet, if too dry add some more

Put the dough on the floured counter

Fold the dough 2-3 times and form into a rectangle, do not overwork the dough

Using a 3 inch cutter cut circles in the dough into circles

"Using as much butter as you're comfortable with" (this is in addition to butter used previously) butter the hot pan that has pre-heated in the oven. Also try not to burn yourself.

Like in the photo nestle the circles in the pan together and then put in the oven for 12-14 minutes
